Fu is dry baked wheat gluten, and this Kakufu, or rectangular fu, is made with carefully-selected ingredients and the product of a manufacturing process undertaken with real devotion. Sesame tofu is not actually tofu made from soybeans, but has a texture just like it. This black sesame tofu is very popular due to its rich aroma and the smooth texture of the kudzu arrowroot it contains. It is one of the main characteristics of the Shojin Buddhist cuisine beloved by the ascetic monks of Eihei-ji Temple. We like it too.
