It can also be used as a versatile seasoning for a variety of dishes, such as shabushabu and grilled eggplant.

 

Amazake Concentrate 180g

Amazake literally means sweet sake, but this drink actually contains no alcohol. In fact, it is a healthy sugar-free drink, enjoyed nationwide since the Edo period (17-19th centuries). The sweet taste comes from glucose made with koji mold and it also contains the natural vitamins B1, B2, B6, pantothenic acid, inositol, and biotin. This product is an amazake concentrate to be consumed after adding half to the same amount of water. Toppings, such as salt, ginger, and citrus, can be used to balance out the sweetness.

This product contains Hida Sansho produced in the mountainous Hida region of Gifu, and its distinctive aroma is a great stimulator of the appetite. Terrific with udon and soba noodles. 

 

Kuradashi Takayama Ramen

The light tasting delicious soup for this ramen was created in a collaboration between a noodle manufacturer and a soy sauce brewer. The noodles are of the thick curly type, and need only be boiled for one minute.

Kikuimo, Jerusalem artichoke, is a vegetable that resembles ginger root. Its flesh has a distinctive crunchy texture, and is known to offer the health benefit of reducing blood sugar levels. The vegetables chosen for this product are pickled in sake lees to give them a richer flavor and fragrance.
